Award-winning chef brings inspiration to Mockley Manor Care Home

Swindon-based care providers Coate Water Care pride themselves on making major investments in their care homes in order to deliver the very best experience for their residents, many who are living with dementia. One example is Mockley Manor in rural Warwickshire which recently underwent a £4 million makeover.

But it’s not just the bricks and mortar that guarantee a premium experience. Coate Water Care also believe in providing the best possible culinary experience for their residents. At Mockley Manor that involved a recent collaboration with Matt Cheal, award-winning chef and co-owner of the highly rated Cheal’s of Henley.

“It was a pleasure to have Matt here recently,” says Mockley Manor’s chef Jean Pierre Adjutor, known to everyone as JP. “He demonstrated how to make different types of foam, a favourite of mine was the cauliflower cheese. He showed a real diversity to presenting a softer type diet to those who have swallowing issues.”

“Matt was very informative about his techniques and how to support people with a variety of dietary requirements and specialities.”

JP has used Matt’s knowledge to help him review presentation of food and how day-to-day foods can be made into foams and other types of dishes.

The Mockley Manor menu changes throughout the year to reflect the use of seasonal vegetables. The residents continue to have their favourite foods such as traditional Sunday roast and fish and chips on a Friday, but they have also been trying other foods such as buttered chicken and BBQ Pork which is proving popular at the moment. The favourite desserts are pineapple upside down cake and chocolate brownies.
